The Christmas pudding we know today is a far cry from it’s original recipe. Originally Christmas pudding was created with many things such as fowl, pheasant, partridge and bunnie. Gradually significantly more fruits were added to resemble something a bit more like today’s Christmas Pudding Recipe.

Christmas pudding did start to evolve in your Fourteenth century when it was actually more of a porridge called frumenty. This was a pudding cooked by boiling meat and mutton with raisins, currants, prunes, wines and spices or herbs. Frumenty had more your look and feel of soup as was eaten as a fasting dish in preparation for Christmas.

Your particular recipe was gradually changed by 1595, when it was thickened with eggs, breadcrumbs, dried fruits and provided with more flavour by adding ale and spirits. It became known more commonly as plum pudding along with became the traditional dessert for Christmas. Method:

1.Using a large blending bowl mix all the dried ingredients together. Make sure that the fruit is clean and your sticky peel is separated.

2.Peel and grate your carrot and add to your combination.

3.Beat your eggs well in a separate bowl then add, along with your treacle and golden syrup to the various other ingredients

4.Pour in your brandy.

5.Put in your stout to make this mixture moist but not too ‘runny’.

6.Give the pudding a final mix, let every one of your members of the family take a stir when following your Christmas pudding traditions, make a wish and leave to sit for a short while.

7.Grease your pudding bowl effectively.

8.Place the mixture into the basin and cover with either wax paper paper or even cooking foil.

Cooks Suggestions:

Make a fold in the foil to allow more than enough room for the mixture to grow without your foil splitting.

Use household string to tie up the aluminum foil in place creating a ‘handle’ with it at your same time. This makes it easy to lift your cooked pudding out of your pan after it has cooked.

For an even more intense flavor, your dried out fruits might be soaked in your Brandy and ale for 2 days before you make the cake. This permits your fruit to absorb your liquid and develop your particular flavors even more.

Steaming your Christmas Pudding: Takes 8-9 hours

Bring a big pan of water to the boil. Gently lower the container into the pan, taking care that your liquid does not come over the top. Turn your heat down to a gentle simmer. Look at the pudding every few hours to ensure that the water has not boiled dry and add more water at your appropriate interval. If you have made your string handle you have to be able to carefully lift your pudding out following the cooking time by using a wooden spoon.

After Cooking

If you employed greaseproof paper, get rid of it and substitute with fresh. Aluminum foil covers could be safely still left if they are undamaged. Leave your pudding in a cool. As soon as cooled protect in a dark place until Christmas Day.

On Christmas Day.

Place your pudding in a substantial pan of water, bring to a boil, next simmer for an hour, making sure it does not boil dry.

To Serve:

Turn your pudding out onto a suitable serving plate, decorate with a sprig of holly. If using Brandy, carefully heat it in a metal ladle on the low fire or in a pan, do not boil. Pour over Christmas pudding and set alight at once.

Serve with mince pies, cream or custard or Brandy butter.
